Born from the Mediterranean

XANTOS takes its name from the ancient city of Xanthos on Turkey's Mediterranean coast.

During our travels, we fell in love with the region's rich history, warm hospitality and unforgettable food. The name stayed with us because it reflected everything we wanted our food to be—bold, authentic and full of character.

Fuelled by Our Roots

We're Ejder and Ananda, a husband-and-wife team with two very different food stories.

Ejder grew up in Turkey's Mediterranean hills, where meals centred around fresh ingredients, grilled meats, herbs and generous hospitality.

Ananda was raised in a free-spirited New Zealand community where colourful, plant-forward food brought people together.

Together, those influences shape everything we serve today.

Before XANTOS came Vege Pulse—our original food truck and the beginning of our journey.

For more than eight years we've catered festivals, corporate events, schools and private functions across New Zealand, learning what it takes to serve great food to large crowds.

XANTOS builds on that experience with a larger truck, a broader menu and the same commitment to quality and hospitality.
